1/4 cup Unsweetened Coconut (grind to fine powder)
1/4 cup flax meal (grind to fine powder)
1/4 cup vanilla flavored whey protein powder
1/4 cup of unsweetened canned coconut milk
1 tsp. of baking powder
Dash of salt
Add Stevia to taste (or your favorite sweetener)
2 egg whites (save the yolks for coconut rice below)
1-2 Tbs. of Oil
Add water and beat until smooth.
This makes two large great tasting pancakes that are very filling. One note of caution, do not cook on high heat as they will burn easily.
I eat them with butter, peanut butter or almond butter, or cover with fresh sliced fruit or fruit sauce.
Each pancake has:
20g of protein
28g of fat
3g of net carbs (10g of total carbs minus 7g of fiber)
