Our Soaked & Dried Cashews are USDA Certified
Organic by ICS (International Certification Services).
This product has been inspected by Earth Kosher,
a kosher certifying agency in the United States.
These Certified Organic Cashews have been soaked as
Sally Fallon and the Weston A. Price Foundation suggests,
and then dehydrated at low temperatures.
Cashews are a good source of protein and fiber and
contain less fat than most other nuts. (See nutritional
panel for saturated fat content.)
Our Certified Organic Cashews are fresh, flavorful and
delicious. We do our best to procure the highest quality nuts
available. They are soaked and dried under controlled conditions
with commercial equipment in a USDA inspected kitchen. We take
extra measures, such as refrigeration and vapor barrier
packaging to insure that you receive only the best.
Cashews sold by Wilderness Family Naturals are imported
from Viet Nam. They are the only nut sold by WFN that
some might not consider raw. Just prior to cracking, these
freshly harvested nuts receive a burst of steam to soften the
hard outer shell. This occurs because the outer shell of the
cashew is nearly impossible to crack without a quick burst
of steam. Even with careful cracking and a perfected process,
the highest amount of whole nuts available are about 60%. When
hand cracked without the use of steam the amount of broken
cashews is very high and because it is labor intensive
and results in lots of waste the cost of those cashews
are outrageous. Unfortunately, trying to work with a lot of
broken cashew pieces in all kinds of sizes results in nuts
that do not soak and dehydrate evenly.
Upon investigating the processing of cashews, it became
our belief that the interior nut sees very little or no heat
from the steam, and the quality of the nut from this type of
cracking process is more uniform with many more whole pieces.
So that is the nut we have chosen.
In July 2003, the FDA released a qualified health claim
stating "Scientific evidence suggests, but does
not prove, that eating 1.5 ounces per day of most nuts, as
part of a diet low in saturated fat and cholesterol, may
reduce the risk of heart disease."
