Brittany Sea Salt is very concentrated so you need only use about one third of the quantity you normally use.
Fleur de Sel is an all natural sea salt from Brittany. Unprocessed, unrefined and unadulterated. Fleur de Sel is literally translated “Flower of the Salt” It is the least salty, purest part of the saline. The harvest (forming) is usually from May to September. And for every 80 pounds of sel gris (gray Brittany sea salt) produced, only three pounds of Fleur de Sel is harvested.
In Brittany near the town of Guérande, the climate is milder than the rest of Brittany. In this region you find an abundance of marshes and low lying areas and it is here that the currents of the Atlantic Ocean run cleaner than many other salt harvesting locations. This makes salt from the Guérande region preferred over other "salt farms".
The salt fields of Guérande are long narrow series of basins that are flooded by gravity. The size allows an artisan paludier (craftsman salt harvester) to "sweep" the top of the evaporating sea water capturing the white bloom that appears on the water’s surface.
Fleur de Sel is considered to be the crème de la crème of French Sea Salts. It has a fine light texture. The taste of Fleur de Sel is the complex balance of the sea and its minerals with small flaky crystals, a moist texture and a slight grey /pink cast. It is used to finish a dish rather than as a cooking ingredient for say pasta water. It is a natural complement to fresh raw vegetables, salads, or grilled meats. A truly fulfilling moment is fresh trimmed radishes dipped in Fleur de Sel and served with sweet butter and sliced baguette.
