Freeze Dried Peaches are produced using very low temperatures and a vacuum. This “evaporates” the water in the fruit from an “ice” state into a gas. The two major benefits of this process are:

• The water as it vaporizes does not carry away with it some of the taste and flavor of the fruit.
• Significantly more moisture can be removed than with standard dehydration processes.
• No heat is used in the freeze drying process.
• Freeze dried fruits and vegetables have a very good shelf life when stored properly.

Only about 3% of the moisture remains when it is ready for packaging. The resulting peach slices are crispy and extremely flavorful. They are light and crunchy because very little water is retained, giving them a good shelf life and concentrated flavor but unlike dehydrated fruit, they retain the size and shape of the original fruit without any shrinkage. This process also allows the fruit to be dried without the use of heat or preservatives, yet retain its natural color and taste. These slices easily rehydrate into peach halves very similar to the original fruit.

Freeze Dried Peaches are perfect as a snack when eaten alone or as an addition to cereals and desserts. They rehydrate quickly in water, yogurt, milk or juice and can be used just like fresh peaches after only a few minutes in liquids.

Rehydration Instructions:

Add 1 cup freeze dried peaches to 1 cup water and soak for 3–5 minutes until tender. Drain any excess water. Yield: 1 cup sliced peaches.
