I've been looking for a natural, substitute to white sugar for a few years. Learned the awful truths about artificial sweeteners, found out that my body doesn't do well using honey or unrefined cane sugars, sugar alcohols, or agave syrup...so I had given up...and then I came across coconut sap sugar, and I have found what I need. It isn't as sweet as white sugar but that's good because I'm appreciating less sweetness in my foods. The calories for 1 tablespoon of coconut sap sugar is the same as 1 teaspoon of white sugar, and it has a little bit of a flavor that makes it taste good not just sweet. Works great as a brown sugar substitute, too, as it has that richer flavor. It's subtle flavor and sweetening is exactly what I was looking for, helping me appreciate the natural sweetness of foods, yet giving me that "sugar" taste I miss sometimes. Great in coffee, tea and cooking. I highly recommend giving it a try to see what you think!

Even though my pantry was full of various organic sugars, I ordered one bag of the coconut sap sugar. I made a double batch of oatmeal cranberry cookies using this sugar along with a small amount of brown sugar (I wanted my one bag of coconut sugar to last awhile). It creamed in well with the butter & eggs and imparted a perfect sweetness to the cookies. Plus, the crystals dissolve well. Tastes great - a wholesome good for you flavor & sweetness. I will order more than one bag next time.
