These tetra paks of coconut milk contain approximately 8 oz. each. The milk is smooth and creamy. It is composed of 17% oil (mostly medium chain triglycerides), approximately 1% protein, and 1% carbohydrates. Each 8 oz. (250 ml) carton contains approximately 2 ½ tablespoons of oil giving it a satiating, rich flavor.
Coconut milk has a delicate coconut taste that enhances dishes such as rice pudding, ice cream, and curries. A coconut cream pie made with coconut milk is so much better than one made with evaporated milk from a can! Smoothies are another common way people use this coconut milk, but there are so many possibilities it is impossible to list them all.
The colder the coconut milk is when you pour it, the thicker it will be. If this milk becomes frozen the emulsion will break, but the emulsion can easily be restored by warming the milk (above 76 degrees F) and whizzing it for a few minutes in any blender on high speed.
