Pistachios have been commercialized in California, but originated in the Middle East. The green color of the nut meat comes from Chlorophyll. At ambient temperatures, pistachios have a one-year shelf life. They may loose a little of their flavor as they set on your shelf, but they will not go rancid. Of course our Pistachios are very flavorful, as fresh as we can get them, and delicious.
