Wilderness Family Naturals has a new, unique extra virgin olive oil produced by a co-operative of small farmers living on the coast of the Aegean and Mediterranean Seas.  Only the best young Aegean olives are used, making this one of the highest quality extra virgin olive oils on the market. Brownies Made with Coconut Flour

In a saucepan at low heat, blend together butter and cocoa powder.  Remove from heat and let cool.  In a bowl, mix together eggs, sugar, salt and vanilla.  Stir in cocoa mixture.  Add well sifted coconut flour (a wooden spoon and sieve works well) and whisk the batter until there are no lumps.  Fold in nuts.  Pour batter into a greased 11x7x2-inch or 8x8x2 inch pan.  Bake at 350 degrees F (175 C) for 30-35 minutes.

Tip:  Coconut flour quickly absorbs lots of moisture.  Don’t spare a drop of liquid for this recipe.

   

Banana Bread with Coconut Flour

Blend together mashed banana, eggs, coconut milk, sugar, vanilla, almond extract, and salt.  Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps.  Fold in nuts.  Pour into greased 9x5x3-inch loaf pan and bake at 350 degrees F (175 C) for 60 minutes.  Remove from pan and cool on rack.

Tip:  Coconut flour quickly absorbs lots of moisture.  Don’t spare a drop of liquid for this recipe.
