Coconut Milk

Coconut MilkThis coconut milk is approximately 17% coconut oil.  Each 250 ml carton contains approximately 2 ½ tablespoons of coconut oil.  Many Americans drink this coconut milk right out of the carton because it is so delicious.  Rarely, can a person find something so healthy that tastes this good.

This coconut milk is smooth and creamy with a natural sweet coconut taste. It is a little thicker than cow’s milk or nut milks, but it can be used in all milk applications. It is a wonderful base for smoothies. This milk can be refrigerated without any separation of the oil from the milk. We find this coconut milk superior to coconut milks that are bottled in cans.

If you would like to have milk that is less rich, or one that is lower in fat, just add some coconut water. You will be thrilled with the taste.

This milk can be used as a base for protein drinks and smoothies, in cream sauces, and to make homemade ice cream and meringues. It can be used in place of milk in all recipes. It is slightly thicker than other milks and has a light sweet coconut taste.

More About Coconut Milk in Tetra Paks

Our coconut milk in tetra paks no longer contains sodium casinate.  Instead a trace amount of lecithin is used as the emulsifier.  This makes the milk tolerable for people who are highly allergic to cow’s milk.  The only other additive is a small amount of xanthan gum.  Only trace amounts of these substances are added, but their addition makes the milk creamy, smooth and delicious with very little if any separation upon refrigeration.

Changes in temperatures can affect coconut milk’s pouring characteristics. Cold weather can make it thicker; warm weather can make it thinner.

Making Homemade Coconut Milk from Fresh Coconuts

For those who might want to try preparing coconut milk at home, the following provides instructions for doing so.
  • Pierce the eyes of a fresh coconut, drain the liquid inside and place the coconut on a rack and bake in a 325F pre-heated oven for about 30 minutes.

Coconut Milk Ice Cream

Coconut milk can be churned in an ice cream maker to make ice cream.  As a matter of fact, Bruce Fife is working on a new cookbook with loads of recipes in it using all types of coconut products.  Coconut milk makes wonderful ice cream.


Hot Chocolate

Use either coconut milk or coconut cream and add a teaspoon of cocoa powder or carob powder and the sweetening of your choice.  It is better than any hot chocolate you have every had and since there are very few hot chocolates that do not contain partially hydrogenated vegetable oils. If you want to be healthy, this is a much better choice.


Egg Nog

Use either coconut milk or coconut cream and add one egg, a pinch of nutmeg and a pinch of cinnamon along with your sweetener of choice.  This makes a wonderful holiday drink that you can have all year long.
