Coconut Milk powder is made from freshly pressed coconut milk. This thick,
rich milk has just a touch of maltodextrin (a flocculating agent) and sodium
caseinate added (to keep the oil in the follicle). The powder is 95% coconut
milk, is smooth and silky and definitely contains the sweet taste of
coconuts.
Because it is so high in fat (60-65% coconut oil) this powder mixes best
with warm or hot water. An immersion blender, shaker jar, or other type of
blender or hand whisk will work best. However, a fork or spoon will work,
they just take longer!
With this coconut milk powder you can make your coconut milk as rich and
creamy or as thin as you want. It is great as a base for ice cream, can be
used as a creamer or added to a stir fry to form curry, but it can also be
made thinner and used as a milk over cereal, as milk in recipes for breads
or other baked goods, in sauces or with smoothies.
Coconut milk powder tastes great right off the spoon! So you can use it in
place of powdered sugar for putting a powdery finish on chewy treats or
soft raw cookies
